店主の古藤明博です。 とんかつ屋を始めて以来、私が一貫しているのは、最高のとんかつを揚げるという思い。多くのお店がフライヤーで機械的な調理をする中、当店はフライヤーを使わず、オーダーいただいてから丁寧に肉に衣をつけて油鍋でじっくりと時間をかけて揚げていきます。 揚ったかどうかを判断するのは長年養ってきた料理人として の勘。例えば、泡の出具合や泡の音です。変な言い方かもしれませんが、油の中のとんかつと相談しながら揚げていきますので、常にベストな状態でご提供することが出来るのです。 二条のとんかつは衣はサクッと、お肉はふっくらジューシーが 決め手です。お皿にのって運ばれてきたらまずは卓上の「アン デスの岩塩」を一振りして頂くことをお勧めしています。 そしてとんかつに勝るとも劣らず力を注いでいるもの。それはおいしいご飯、おいしい味噌汁、おいしい漬物をご提供すること。 お客様に食を通じて幸せを感じていただければ、私たちにとってそれ以上の幸せはありません。これからもこれまでと変わらぬ思いで、最大限の愛情と技を料理に注ぎたいと思います。
