昭和60年開業の開花屋のお料理は料亭料理人としてキャリアを積んだ店主による「東西魚料理」です。調理技能士・日本料理専門調理士・ふぐ調理師・日本魚マイスターの資格を持つ根っからの魚オタクが世界各地を回って、その地のシーフードを参考にして作ったレシピは全てオリジナル。看板メニューの刺身の盛合せは地方市場や豊洲市場から毎日仕入れる鮮魚7種で料亭風に、1尾丸ごと調理する「鮮魚の焚火焼き」「雑魚のグリル」はイタリア、トルコの港町の食堂料理を参考に作りました。 また、もう一つの看板メニュー「鮪のカマのスペアリブ」は東南アジアの調味料を使い、豊洲市場マグロの大善さんのご協力の元、本鮪・インド鮪の脂の乗った稀少部位「骨付き顎肉」を使用しています。 ご予約は当店ホームページまたは予約サイトからコース料理選択の上お願い致しております。直接ご来店のお客様はアラカルトオーダー可能ですが、お電話でのご予約も受け付けておりません。 皆様のご来店を心よりお待ち申し上げております。
