La formula che ha dato successo alla Spada è semplice: un ambiente caratteristico rustico ben curato, prodotti di qualità, una cucina genuina, carni allo spiedo e alla brace cotte alla perfezione e soprattutto, cosa sempre più difficile da trovare a Firenze, un ottimo rapporto qualità prezzo. Il piatto forte è il “Grande arrosto Misto allo spiedo” servito sempre con patate arrosto e la bistecca alla fiorentina cotta alla brace, esclusivamente di quercia e carpini, che danno alla carne un sapore unico. Molto bello da vedere anche il grande girarrosto con una fiamma sempre viva, ormai fra i pochi a Firenze.
