Ons culinair avontuur begon in 2005. Op zoek naar een geschikte locatie voor ons restaurant kwamen we terecht in de Onderbergen in Gent, waar een te renoveren herenhuis (anno 1870) te koop stond. Na 3.5 jaar renoveren, kon het restaurant eindelijk open. Intussen zijn we 14 jaar verder en kunnen we terugkijken op een heel mooie tijd, mede dankzij een schare aan trouw clienteel én medewerkers. The concept of Gillis was straightforward from the beginning: eat great meat, and drink great wine. Together with his father, Bram mixed in all of his passions: butcher skills, Italian wine, hospitality, and (most precious of all) family values. Gillis was meant to be a home, rather than a steakhouse. Now, it truly is. In 2020, Bram met Jozefien, the woman he’s going to marry one day soon. And ever since, they’ve been working side-by-side at Gillis, alongside chef “Grill” Olivier.
